At the heart of Puelo Coffee Roasters lies a story of origin, identity, and purpose. Inspired by the untouched nature of southern Chile and named after the serene Río Puelo, the brand was born to offer more than just great coffee—it was born to offer a moment of pause.
For Puelo Coffee Roasters, coffee is not just a beverage. It’s a ritual. A rhythm. A chance to slow down and reconnect with what matters. This philosophy of “Slow Coffee” is what drives everything they do: from sourcing green beans with traceable origins to roasting at their pace, never rushing quality, never compromising on flavor.
What Is “Slow Coffee?”
In a world that moves fast, Puelo Coffee Roasters chooses to go slow—on purpose. Slow Coffee is about taking the time to respect every step of the process, from farm to cup. It means thoughtful sourcing, gentle roasting, clean brewing, and intentional service.
It’s also about creating an experience that invites customers to disconnect for a moment and truly savor their coffee. As Tomás Guilisasti, co-founder of Puelo, puts it: “When you drink a specialty coffee, you’re not just having a drink—you’re giving yourself time. Just like the Kingfisher (symbol of Puelo Coffee Roasters) waits patiently to fish, we take the time to roast, brew, and serve with purpose.”
Why Victoria Arduino?
To bring their philosophy to life, Puelo Coffee Roasters needed technology that could match their performance, attention to detail and design, and eco-conscious values. That’s where Victoria Arduino came in.
“The Black Eagle Maverick espresso machine delivers efficiency without rush, precision without pressure. Its minimalist design and low environmental impact make it the perfect partner for Puelo’s Slow Coffee ethos. Energy-saving technologies and thermal consistency support baristas in delivering excellent results with ease and reliability. Black Eagle Maverick’s intuitive operation means baristas can focus less on the machine and more on the customer. That’s Slow Coffee in action” said Tomás
Equally important is the Mythos grinder. “With temperature control and dose consistency, Mythos ensures that every bean’s potential is preserved. Its reliability, even under heavy usage, has made it indispensable—whether during busy mornings at the café or high-pressure events”.
As Tomás notes “In specialty coffee, you can have the best beans and the best roast—but if the barista doesn’t work with great tools, the coffee won’t shine. Black Eagle Maverick and Mythos help us protect our coffee’s story, all the way to the cup.”

More Than a Brand: A Way of Living Coffee
Today, Puelo Coffee Roasters operates across two distinct locations in Santiago’s Vitacura neighborhood: their original café, a full-service restaurant-style coffee bar, and a dedicated roastery with open-door tastings and educational experiences. Each space reflects the same philosophy: quality, transparency, and a connection to nature.
“The locations’ project combines the natural character of southern Chile, especially the Puelo River area, with a modern design approach focused on specialty coffee and the tradition of roasting. We contrasted an industrial design aesthetic with clean lines and neutral tones with the warmth of fine materials from southern Chile, such as pellín oak and myrtle – said Cristobal Fell, the architect who took care of the design of Puelo Coffee Roasters’ shops.
“The roastery’s design is experience-oriented, with a production area visually integrated through glass panels, where the roaster is the centerpiece of the narrative and visible to the public. A coffee tasting laboratory completes the tour, creating a connection between the sensorial and the architectural aspects. The rest is the experience itself from a café, which enhances the project and ultimately tangibly delivers the designed experience.”
Puelo Coffee Roasters is more than a roastery or café—it’s a living embodiment of Slow Coffee. With a growing community in Santiago and the launch of their electric roastery—the first of its kind in South America—Puelo Coffee Roasters is redefining what it means to build a specialty coffee culture.
And with Victoria Arduino by their side, they’re doing it with precision, design, and intention.
“You can have the best coffee in the world—but without the right tools, you risk losing its essence,” says Tomás.. “Black Eagle Maverick and Mythos are not just equipment. They are part of our team.”
